Trying New Recipes

I happened upon the Recipe Exchange at Remodelholic and I guess I was hungry because I tried a couple of the recipes on the spot.  I figured I had the stuff and the time since we're on spring break, so I dove right in.

First we tried the Marinated Tomato Toast that Cassity posted.  We didn't have sourdough bread, so I made some of Firecracker's Focaccia bread (although without the Rosemary and olive oil since I figured there'd be enough in the tomatoes.)  I also reduced the oil it calls for by 1/2...so I only used a 1/4 cup and when I make this again, I'd probably cut it by half again.  I used grated mozarella instead of sliced...and left it under the broiler for about a minute too long, so all the smoke detectors in the house went off when I opened the over...but it still was delicious!

Then the Thai Chicken Pasta posted by Danielle looked delicious and easy, and most importantly I had all the stuff for it. 

We will definitely be making this again.  I forgot to add the cilantro, which we love...but at least it can go in the leftovers. :)  It was too spicy for the kiddos, but they ate the noodles with parmesian cheese and had the Marinated Tomato Toast to enjoy with it.  Danielle is having a giveaway on her blog this week, so be sure to visit and leave some comment love.
I probably won't make these two delicious dishes in the same meal again because the flavors are pretty different, but they are both delicious!
