
I realize this is too late to inspire anyone else's Halloween breakfast...but pumpkins can work for the rest of fall, right? I figured the kids might not get enough sugar on Halloween...so we had pancakes for breakfast...pumpkins style of course. To start we made regular pancake batter. For us that means using Aunt Arlene's Feather Light Pancake Recipe from the family cookbook. Then we added a bit of orange Wilton food coloring...well a tad more than a bit. I was surprised at how much we had to add actually. It was probably on the order of a 1/4 tsp.
When we cooked them, I poured the big part of the pumpkin first. Then after it had "set" just a bit, I added the stem. Some turned out better than others. Then the kids and I used raisens to make the faces.
The kids loved them. I might have tried making them taste like pumpkin too, but then I don't know if the kids would have eaten them. This might become a tradition...but I guess we won't know for sure until next year.


Aunt Arlene's Feather Light Pancakes
Sift together:
2 cups flour
3 Tbsp. sugar
1 tsp. baking soda
3/4 tsp. salt
Combine:
2 eggs, beaten
1 3/4 cups milk
1/4 cup vinegar
1/4 cup oil
Mix together until smooth. Bake on pancake griddle.
